Fresh Couscous Salad



Ingredients:


  • Couscous

  • Broccoli

  • Carrots

  • Red Peppers

  • Brussel Sprouts

  • Cucumber (or vegetables of choice)

    Salad Dressing - Lemon, Olive Oil, Salt & Pepper


Directions


Boil couscous with 1/4 cup of water or 1 cup broth with 1/2 teaspoon of salt and butter. Stir, cover and let it boil for 5 minutes. While your couscous is cooking, boil your vegetables with 1/2 salt until they are ready. Mix cooked couscous and vegetables in a bowl and finish of with your salad dressing.
